Fastelavnsboller!

Though fasting is no longer common during Lent in Norway, some traditions have hung on - the kids have carnival at school and dress up. Fastelavnsris - birch twigs decorated with brightly colored feathers - are gathered or bought.

And fastelavnsboller are made and snarfled!

Recipe translated from Tine.no.

Preheat oven to 250 C.

Melt 100 grams of butter, add 350 ml of whole milk and warm to 37 C. Crumble 50 grams of fresh yeast in a large bowl and add the milk/butter mixture and stir to mix. Add 100 grams of sugar, 1/2 teaspoon salt, 1/2 teaspoon cardemom, 1/2 teaspoon baking powder and 500 grams flour and mix everything together into a smooth dough. Cover with plastic and let rise in a warm place for 30 minutes.

Turn out the dough onto a floured surface, divide into 16 equal peices and roll into buns and place on a baking sheet. Cover with plastic and let rise for another 20 minutes.

Fastlavnsboller!

Brush with egg wash and bake for 8-10 minutes. Let cool.

Whip heavy cream with powdered sugar, divide buns and place whipped cream inside. Sprinkle with more powdered sugar.

Shrovetide buns!

Eat them all in one sitting.

This morning he snuck up beside me to sleep, on the very edge of the bed, and then attempted to do one of those very cat-like stretches and nearly fell off. Fortunately he caught himself.
